Wibble Wobble, Jelly on a plate …But I made JUBES…

Sorry, Bex Mum again to the rescue to finish her blog…..

Recently, Bex was home sick….And usually I make the kids stay in bed ALL day with NO devices to entertain them!!!! I know I am a mean mother 😦 But they are sick….They need to sleep all day, stay in a dark warm room and get better quickly so they can go back to school and leave me to do what I need to do 🙂

Instead by 2pm, Bex is so far from sick she is driving me nuts..So what do we do??? We bake…..well, she bakes. I appear to be only here to clean up after her hurricane in the kitchen…. (yes i know, this scenario seems a little back the front)….

A few weeks ago we saw a lovely post from Bakerella the famous creator of Cake Pops.. This time she made Goodie Goodie Gumdrops…we call them jubes in Australia.

Goodie Goodie Gumdrops by Bakerella

4 Tbsp gelatin
1 cup cold water
1 1/2 cups boiling water
4 cups sugar
1/4 tsp flavored extract like lemon or peppermint
1-2 drops food colouring
extra sugar for coating


In a large pot, soften gelatin in cold water for five minutes.

  • Stir in boiling water until gelatin dissolves.
  • Stir in sugar.
  • Bring to a boil over medium-high heat and boil for 25 minutes. Stir constantly.
  • Pour mixture into 4 – 3X5 pans.
  • Add 1/4 tsp extract and 1-2 drops food color to each pan.
  • Stir until thoroughly combined.
  • Cover pan and chill overnight in the fridge.
  • Cut gelatin mixture into 3/4 inch cubes using a knife dipped in hot water.
  • The gelatin may pull, but continue cutting.
  • Separate cubes and roll in sugar until coated on all sides.
  • Place gumdrops on wax paper and leave at room temperature for two days to crystallize.

Store in an airtight container.
Makes about 8 dozen 3/4 inch gumdrops.

Having made the jukes bex is now dunking them in sugar..

We did not have the little containers to make the jubes in so we used all and sundry including little tupperware sandwich boxes.

They were so simple and easy and Bex obviously fully recovered from her critical illness, was able to eat a few and save a few for her brother and sister.

They tasted great and so many were made we had them in the house for a while. Alot longer than a cake would have lasted.
